Pineapple Cake

Recipe from a friend, Georgetta.  Delicious cake and the topping really makes this one a winner! 

2-1/4 cups flour

1-1/2 cups sugar

1-1/2 teaspoons soda

1/4 teaspoon salt

1 large can crushed pineapple

1/4 cup water

1/2 cup butter

2 eggs

 

Drain pineapple and save juice. Cream butter, sugar and egg.  Add dry ingredients alternately with juice and water. Mix well. Batter will be stiff. Fold in pineapple. Pour into greased and floured 9 x 13 pan. Pour topping over batter and bake 25 minutes at 350 degrees. Cover with foil and continue baking 25-35 minutes.

Topping

3/4 cup brown sugar

1 cup chopped pecans

1 cup coconut

 

Mix all together.
