Hungry Boy Casserole

 

A Pillsbury Prize Winning Recipe

 

 Very hearty casserole--green salad completes this meal.

 

1-1/2 lbs. ground beef

1 cup chopped celery

1/2 cup chopped onion

1/2 cup chopped green pepper

6 ounce can tomato paste (no salt added)

3/4 cup water

1/2 teaspoon salt

2 cups cooked baked beans

2 cups cooked limas

In skillet, sauté beef, celery, onion, and green pepper until vegetables are tender. Drain and add water, tomato paste, and salt. Reserve 1 cup for biscuits. Add beans and limas. Simmer.

 

Prepare Biscuits

 

1-1/2 cups whole wheat or unbleached flour

2 teaspoons baking powder

1/2 teaspoon salt

1/4 cup butter

1/2 cup milk

1/2 cup sliced pimento stuffed olives

1/4 cup blanched slivered almonds

 

Sift dry ingredients. Cut in butter. Add milk to flour mixture.  Knead and roll 12 x 9 rectangle. Combine olives, almonds and reserved meat. Spread over dough. Roll up, starting with 12-inch side. Cut into 1 inch pieces. Place meat mixture in 12 x 8-inch or 11-inch round baking dish. Top with biscuits. Bake 425°F 25-30 minutes.
